We recognise

  • The need to urgently reduce GHG emissions to achieve the IPCC’s 1.5 °C target.

 

We commit

  • To base our emission targets on a 1.5 degree compatible lifestyle.

  • To demonstrate this low carbon lifestyle to over 10,000 visitors per year.

  • To offset our minimal remaining emissions so that we are "zero carbon”, but not pretend that offsets are the answer.

  • That food waste and animal agriculture are major contributors to food's environmental footprint.

 

We commit

  • To serve only vegan food in order to build support for plant-rich diets.

  • To use surplus wholesale food in our restaurant and minimise food waste.

  • To procure both organic and fairtrade where possible, for ecological and social reasons.

  • To measure and report our ecological footprint. To demonstrate highly water and energy efficiency devices. To procure the lowest impact services and products.

  • To reduce our consumption by using surplus food and furnishing our cafe with second-hand furniture and crockery.

  • To eliminate single-use plastic (by 2022).
